Elevate your roast beef with Yorkshire pudding - a simple yet magical eggy batter that puffs up dramatically in beef drippings. Perfect for a special roast dinner.
Ingredients:
  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 2 large eggs, beaten
  • 2 to 4 tablespoons roast drippings
Instructions:
  • Prepare the batter by whisking together flour and salt in a large bowl, creating a well in the center. Add milk, melted butter, and eggs, then beat until the batter is smooth with a whipping cream consistency. Allow it to rest for one hour.
  • Preheat the oven: Get the oven ready at 450°F.
  • Heat the roast drippings in the baking dish: Place a teaspoon of drippings in each well of a popover or muffin pan, then heat in the oven for 2 to 3 minutes. Alternatively, for the sheet pan version, spread drippings in a 9x12-inch dish and heat in the oven for 10 minutes until sizzling.
  • Once the pan is hot, pour batter into muffin/popover pans, filling 1/3 full, or into a baking dish. Bake popovers at 450°F for 10 minutes, then reduce heat to 350°F and bake for 5-10 minutes until golden. For Yorkshire pudding, bake in a baking pan at 450°F for 15 minutes, then reduce heat to 350°F and bake for 15-20 minutes until golden. Serve by cutting into squares. Enjoy the recipe?
