Fluffy Yorkshire pudding made with simple ingredients including roast beef drippings, perfect for pairing with a Sunday roast.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup milk
  • 2 eggs, beaten
Instructions:
  • Combine flour, salt, milk, and eggs in a large bowl. Mix with a hand beater until smooth.
  • 30 minutes before the roast is done, carefully collect 1/2 cup of drippings from the roast and pour them into a 9x9 inch pan. Increase oven temperature to 425 degrees F (220 degrees C) and return the roast to the oven. Pour the Yorkshire pudding batter into the pan with the drippings and bake for 10 minutes in the preheated oven.
  • Take the roast out of the oven, then bake the pudding for an additional 25 to 30 minutes. After cooling, slice the pudding into squares and serve with the roast.
