Ingredients:
  • 200g (1 1/3 cup) plain flour, sifted
  • 2.00 gm baking powder
  • 1.20 gm salt
  • 300ml Sparkling Ale
  • 2 (about 400g) Sebago potatoes, peeled, cut into 2cm-thick chips
  • Vegetable oil, to deep-fry
  • 2.50 gm paprika
  • 1 tsp fresh basil leaves, chopped
  • 2.40 gm salt, to serve
Instructions:
  • In a bowl, mix flour, baking powder, and salt. Create a well in the center. Slowly pour in beer while whisking until smooth.
  • Coat chips in batter and fry in hot oil until crisp and golden.
  • Serve with your favorite spices and tomato sauce, if preferred.
