Kid-friendly peanut butter and apple muffins - perfect for school lunches!
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 tablespoons unsalted butter
  • 0.75 cup natural creamy peanut butter
  • 0.66666668653488 cup brown sugar
  • 0.75 cup milk, or more as needed
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple
  • 1 cup peanut butter chips
Instructions:
  • Preheat the oven to 350°F (175°C) and place paper liners in a 12-cup muffin tin.
  • Combine the flours, baking powder, baking soda, and salt in a large bowl.
  • In a small saucepan, melt butter. Mix in peanut butter and brown sugar. Take off heat and add milk, egg, and vanilla extract. Combine butter mixture with flour mixture until just mixed. Add additional milk, 1 tablespoon at a time, if batter appears dry.
  • Mix in the apple and peanut butter chips with care to spread them throughout. Then, spoon the batter into the muffin cups evenly.
  • Bake in the oven until a toothpick inserted in the center comes out clean, around 20 minutes.
