Fluffy veggie omelet with sautéed onion, bell pepper, and Swiss cheese is a satisfying and nutritious breakfast for two.
Ingredients:
  • 2 tablespoons butter, divided
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 0.75 teaspoon salt, divided
  • 4 large eggs
  • 2 tablespoons milk
  • 0.125 teaspoon freshly ground black pepper
  • 2 ounces shredded Swiss cheese
Instructions:
  • In a skillet over medium heat, melt 1 tablespoon of butter until sizzling. Sauté onion and bell pepper until tender, about 4 to 5 minutes. Remove vegetables from the skillet, toss with 1/4 teaspoon of salt, and set aside in a bowl.
  • In a separate bowl, whisk eggs, milk, remaining 1/2 teaspoon salt, and pepper until smooth.
  • In a skillet over medium heat, melt the remaining 1 tablespoon of butter until bubbly. Pour in the egg mixture, letting it cook undisturbed until the edges set, about 1 minute. Use a spatula to lift the edges, allowing the uncooked egg to flow underneath. Cook until the center starts to look dry, another 1 to 2 minutes.
  • Sprinkle cheese over the omelet, then top with the vegetable mixture on half. Gently fold the omelet over the vegetables using a spatula. Cook until the cheese melts as desired, around 1 minute. Slide the omelet onto a plate, cut in half, and serve.
