Ingredients:
  • 250g (1 punnet) strawberries, hulled, thinly sliced
  • 80g (1/3 cup) caster sugar
  • 80ml (1/3 cup) semillon wine
  • 6 egg yolks, at room temperature
  • Bought amaretti biscuits, to serve
Instructions:
  • Combine the strawberries, 1 tablespoon sugar, and wine in a small bowl, stirring to mix well. Divide the mixture evenly among six 250ml serving glasses and set aside.
  • In a medium heatproof bowl, combine the egg yolks and remaining sugar. Whisk using a hand-held electric whisk or beaters for 5 minutes or until the mixture triples in volume.
  • 1. Set the bowl over simmering water, ensuring it doesn't touch the water. Slowly add the rest of the wine, tablespoon by tablespoon, whisking well after each addition. This process should take approximately 10 minutes until all the wine is incorporated. Your zabaglione should now have a thick, pale texture resembling lightly whipped cream.
  • Pour the luscious zabaglione over the vibrant strawberries in the elegant serving glasses, then promptly enjoy with the crispy biscuits.
