Whipped custard dessert, ideal for biscotti dunking.
Ingredients:
  • 4 egg yolks
  • 55g (1/4 cup) caster sugar
  • 80ml (1/3 cup) marsala
  • Biscotti, to serve
Instructions:
  • In a heatproof bowl, vigorously whisk together the egg yolks and sugar until they become thick and pale. Pour in the Marsala and continue whisking until everything is well combined.
  • Create a double boiler by setting a bowl over simmering water (ensuring it doesn't touch the water). Whisk consistently for 3-5 minutes until the mixture becomes light, fluffy, and forms a ribbon trail when the whisk is lifted.
  • Pour the creamy zabaglione into elegant 125ml (1/2-cup) glasses. Accompany with delicious biscotti for an exquisite presentation.
