Indulgent Italian dessert with eggs, sugar, Marsala wine. Easy custard pairs perfectly with fresh berries.
Ingredients:
  • Zabaglione custard:
  • 6 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon finely grated lemon zest
  • Pinch ground cinnamon
  • Drop vanilla extract
  • 3/4 cup Marsala
  • Serve with:
  • 1 cup heavy cream, whipped
  • Strawberries, raspberries, or biscotti
Instructions:
  • Combine the custard ingredients in a bowl: Mix egg yolks, sugar, lemon zest, cinnamon, vanilla extract, and Marsala in a large stainless steel or Pyrex bowl.
  • Create a double boiler by simmering water in a pot halfway full. Place the custard bowl on top of the pot, ensuring it doesn't touch the water.
  • Whisk the custard mixture vigorously over gentle heat until thickened and tripled in volume, frothy, and pale, ensuring the water in the pot doesn't touch the bowl to prevent curdling.
  • Remove the bowl from the pot: Once the custard reaches the desired consistency, simply take it out of the pot. Use it as a sauce when slightly thickened, or cook longer for a mousse-like texture. Whisk for a minute or two to prevent sticking.
  • Enjoy at your preferred temperature: Serve the custard warm or let it cool for 15 minutes. Gently fold in whipped cream, reserving some for topping, then portion out into dishes. Serve with a dollop of whipped cream, berries, and biscotti.
