Indulge in wine-infused custard with sponge fingers for a gourmet dessert at your next dinner party.
Ingredients:
  • 8 egg yolks
  • 100g caster sugar
  • 125ml marsala
  • Savoiardi (sponge finger biscuits), to serve
Instructions:
  • In a large heatproof bowl, combine the egg yolks. Use an electric mixer to whisk until light and fluffy. Gradually add the sugar and whisk for 5 minutes until the mixture doubles in size.
  • Set the bowl over a gently simmering saucepan of water, ensuring the bottom doesn't touch the water. Slowly pour in the marsala while whisking non-stop for 10 minutes until the mixture is airy, doubled in size, and fluffy.
  • Divide the zabaglione evenly into serving glasses. Enjoy right away with savoiardi, if you'd like.
