Festive chocolate stars with a burst of fruity freshness - perfect for Christmas.
Ingredients:
  • 200g white chocolate, chopped
  • 20.00 ml dried cranberries, finely chopped
  • 20.00 ml dried blueberries, finely chopped
  • 20.00 ml pistachios, finely chopped
  • 20g roasted macadamias, finely chopped
  • 10g (1/4 cup) puffed rice
  • 1 tsp finely grated lime rind
Instructions:
  • Melt chocolate in a heatproof bowl over gently simmering water, making sure the bowl doesn't touch the water. Stir occasionally until completely melted, about 3-5 minutes.
  • In a large bowl, mix together cranberries, blueberries, pistachios, macadamias, puffed rice, and lime rind. Pour in the melted chocolate and mix well.
  • Spoon the chocolate mixture into twelve 10ml and ten 7.5ml silicone star moulds, pressing mixture firmly to fill completely. Tap moulds lightly, smooth surfaces with a palette knife, then refrigerate for 1 hour to set. Gently release the chocolate stars from the moulds before serving.
