Refreshing cucumber and green onion soup in a savory chicken broth - perfect for starting your Asian feast.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3 cucumbers, peeled and diced
  • 0.5 cup chopped green onion
  • 2.5 cups chicken broth
  • 1.5 tablespoons lemon juice
  • 1 teaspoon white sugar
Instructions:
  • Warm vegetable oil in a soup pot over medium heat. Sauté cucumbers until softened, for about 5 minutes. Add green onions and continue to sauté until they are soft, about 5 more minutes. Pour in chicken broth and lemon juice. Mix in sugar and bring the soup to a boil.
  • Lower the heat to a gentle simmer, cover the soup, and let it cook until the vegetables are tender, which should take about 20 minutes. Finish by seasoning with salt and black pepper to taste.
