Whip up a zesty Thai cucumber salad with sweet and tangy vinaigrette, just like the restaurant version.
Ingredients:
  • 3 large cucumbers, peeled, halved lengthwise, seeded, and cut into 1/4-inch slices
  • 1 tablespoon salt
  • 0.5 cup rice wine vinegar
  • 2 medium jalapeno peppers, seeded and chopped
  • 0.25 cup chopped cilantro
  • 0.5 cup chopped peanuts
Instructions:
  • Combine cucumbers and salt in a colander, allowing excess moisture to drain in the sink for 30 minutes. Rinse with cold water, then pat dry with paper towels.
  • Combine sugar and vinegar in a mixing bowl, stirring briskly until sugar dissolves. Mix in cucumbers, jalapeños, and cilantro until combined. Sprinkle with chopped peanuts before serving.
