Sweet, tart, and spicy pasta salad with cilantro, sesame seeds, and lime garnish.
Ingredients:
  • 0.5 cup white sugar
  • 0.25 cup water
  • 1 tablespoon soy sauce
  • 1 teaspoon ground ginger
  • 1 clove garlic, crushed
  • 0.5 teaspoon salt
  • 0.5 cup rice vinegar
  • 8 ounces udon noodles, or more to taste
  • 2 English cucumbers, sliced
  • 1 large shallot, thinly sliced
  • 0.5 red bell pepper, thinly sliced
  • 0.5 small Thai chile pepper, minced
Instructions:
  • In a small saucepan, mix together sugar, water, soy sauce, ginger, garlic, and salt. Boil while stirring until sugar and salt dissolve, approximately 5 minutes. Remove from heat and allow to cool slightly for about 5 minutes. Add rice vinegar to create the dressing.
  • 1. Boil a large pot of water. 2. Cook udon noodles for 10 to 12 minutes until al dente, stirring occasionally. 3. Drain the noodles and rinse with cold water.
  • Place the udon in a spacious bowl and combine with cucumbers, shallot, red bell pepper, and Thai chile pepper. Drizzle the dressing over the ingredients and mix well until everything is coated evenly. Allow the flavors to meld together for at least 20 minutes before enjoying.
