Refreshing Thai-inspired cucumber salad with cilantro, mint, and crunchy peanuts.
Ingredients:
  • 0.33333334326744 cup distilled white vinegar
  • 0.33333334326744 cup white sugar
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 teaspoon salt
  • 2 pounds cucumbers - halved, seeded, and sliced
  • 0.5 cup finely chopped red onion
  • 2 roma (plum) tomatoes, chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 0.25 cup chopped roasted peanuts
  • 2 sprigs fresh mint sprigs
Instructions:
  • In a salad bowl, combine vinegar, sugar, coriander, red pepper flakes, and salt. Mix until sugar is dissolved. Add cucumbers, onion, tomatoes, cilantro, and chopped mint. Toss everything together to coat with dressing. Refrigerate covered for 1 hour to enhance flavors.
  • Just before serving, sprinkle with chopped peanuts and decorate with fresh mint sprigs.
