Zesty Tomato-Crab Bisque

Transform tomato soup into decadent crab bisque in just 20 minutes with a touch of cream and lump crab meat.
Ingredients:
  • 2 cans (19 oz each) Progresso™ Vegetable Classics hearty tomato soup
  • 1 can (7 oz) Old El Paso™ Chopped Green Chiles
  • 1 cup whipping cream
  • 1 teaspoon seafood seasoning (from 6-oz container)
  • 3/4 cup chopped cooked crabmeat
  • Fresh thyme sprigs, if desired
Instructions:
  • In a 3-quart saucepan, bring the soup and chilies to a boil over medium heat. Lower the heat and whisk in the whipping cream and seasoning until smooth. Heat gently (avoid boiling) and then gently fold in the crabmeat.
  • Pour the soup into small mugs or demitasse cups and garnish each serving with fresh thyme.
