Zesty kale pesto prawn pasta: quick, vibrant, and irresistible.
Ingredients:
  • 300g Whole Grain Spaghetti
  • 400g peeled green prawns
  • 20.00 ml chopped basil leaves
  • 1 long fresh red chilli, seeded, chopped
  • Lemon wedges, to serve
  • Baby basil leaves (micro herbs), to serve
  • 100g kale
  • 40.00 ml grated parmesan
  • 40.00 ml blanched almonds, toasted
  • 1 garlic clove, chopped
  • 42.00 gm lemon juice
  • 27.30 gm extra virgin olive oil
Instructions:
  • In a food processor, combine kale, parmesan, almonds, and garlic. Process until finely chopped. With the processor running, slowly drizzle in the combined juice and oil until thickened. Season to taste.
  • Boil pasta in seasoned water until al dente. Save 60ml (1/4 cup) cooking liquid. Place pasta back in pan.
  • In a bowl, mix prawns with oil, basil, and chili. Season with salt and pepper. Heat a non-stick frying pan over medium-high heat. Cook prawns in 2 batches for 2-3 minutes, or until they change color.
  • Combine half of the pesto and reserved cooking liquid with the pasta, toss well. Portion into bowls, garnish with prawns and a spoonful of pesto. Serve with lemon wedges and baby basil leaves.
