Zippy Shepherd's Pie

Whip up a delicious shepherd's pie with make-ahead meat filling and optional instant potatoes. Try it with creamy white cheddar for extra flavor!
Ingredients:
  • 1 pound potatoes, peeled and chopped
  • 1 tablespoon canola oil
  • 1 pound ground beef
  • 1 large onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 (14 ounce) can beef broth
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mild curry powder
  • 1 tablespoon cornstarch
  • 2 tomatoes, coarsely chopped
  • 1 (16 ounce) package frozen mixed peas and carrots
  • 0.25 cup milk
  • 1 tablespoon butter
  • 1 cup shredded extra-sharp Cheddar cheese
  • salt and pepper to taste
Instructions:
  • Boil a pot of salted water until it simmers gently. Add potatoes and cook for approximately 15 minutes until tender yet slightly firm. Drain the potatoes and place them back in the pan.
  • As potatoes boil, warm oil in a large skillet. Sauté ground beef, onion, red pepper, and garlic until beef is browned. Add beef broth, ketchup, soy sauce, Worcestershire sauce, and curry powder. Bring to a boil, then simmer for 3-4 minutes. Blend cornstarch with water to form a paste, then mix into skillet with tomatoes, peas, and carrots. Cook until thickened. Season with salt and pepper, then transfer to a casserole dish.
  • Preheat the broiler in the oven. Mix milk and butter into the cooked potatoes until smooth and creamy. Spread this mixture over the meat, then top with shredded cheese.
  • Broil until the cheese is golden brown and bubbly, for about 3 to 5 minutes.
