Zucchini, Pesto and Goat Cheese Bites

Delicious veggie roll-ups: perfect light vegetarian appetizer. Great for any spread!
Ingredients:
  • 3 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup chèvre (goat) cheese
  • 8 teaspoons basil pesto
  • 15 small basil leaves
  • 15 toothpicks
Instructions:
  • Prepare the cookie sheet by lining it with paper towels. Slice each zucchini into 5 thin lengthwise strips, each measuring 1/4 inch thick. Brush oil on both sides of the zucchini strips and season with salt and pepper.
  • Preheat grill pan or grill over medium-high heat. Grill zucchini for 4 to 5 minutes until softened. Flip and grill for an additional 2 minutes. Remove zucchini from heat and let cool for 5 minutes.
  • Place a generous teaspoon of cheese on the end of each zucchini strip, followed by 1/2 teaspoon of pesto and a fresh basil leaf. Roll up the zucchini strip and secure it with a toothpick. Chill in the refrigerator for at least 30 minutes until completely cold.
