Zucchini Noodles with Basil Pesto and Bacon

Zesty zucchini noodles coated in savory bacon and pesto sauce.
Ingredients:
  • 8 slices turkey bacon
  • 0.5 cup basil pesto (such as Classico® Traditional)
  • 3 large zucchini, ends trimmed
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons freshly grated Parmigiano-Reggiano cheese
  • 1 cup fresh arugula
  • 1 pinch sea salt and freshly ground black pepper to taste
Instructions:
  • Position an oven rack approximately 6 inches below the broiler and preheat the broiler. Arrange the bacon slices on a large baking tray.
  • Broil in the preheated oven for 9 to 12 minutes until crispy. Transfer to a large plate lined with paper towels to cool and harden.
  • Break the cooled bacon into smaller pieces and mix with pesto sauce.
  • Create zucchini noodles using a spiralizer or julienne peeler, cutting midway to maintain a manageable length.
  • In a saute pan, warm olive oil over medium heat. Cook zucchini and garlic until tender, about 3-4 minutes. Mix in pesto-bacon and heat for an additional 2 minutes. Toss thoroughly to coat noodles evenly. Adjust seasoning with salt to taste.
  • Sprinkle with freshly grated Parmiggiano-Reggiano cheese to melt as dish is warm. Season with freshly ground black pepper, then add arugula on top without mixing. Serve promptly.
