Zucchini, tomato and bocconcini pizza

Elevate your pizza with zesty zucchini, ripe tomato, and creamy bocconcini toppings.
Ingredients:
  • 2 large pizza bases
  • 250ml pasta sauce
  • 150g cherry bocconcini, coarsely torn
  • 3 zucchini, thinly sliced lengthways into ribbons
  • 250g cherry truss tomatoes
  • 35g olive
  • 130g pesto
  • Basil leaves, to serve
Instructions:
  • Preheat your oven to a piping hot 240C and get your 2 baking trays ready with a lining of baking paper.
  • Lay the pizza bases on the prepared trays. Evenly spread pasta sauce on each base. Top with bocconcini, zucchini, cherry tomatoes, and olives.
  • Bake until the bocconcini melts and the pizza is heated through, approximately 10 minutes. Finish by dolloping pesto on top and sprinkling with fresh basil leaves.
