Indulge in a flavorful Italian Caprese salad with bocconcini, tomato, bell pepper, and zucchini.
Ingredients:
  • 6 capsicum (we used red, yellow and orange)
  • 4 zucchini, halved lengthways, thickly sliced
  • 250g cherry tomatoes, halved
  • 360g cherry bocconcini cheese (see note), drained
  • 125.00 ml basil leaves
  • 1 lemon, rind finely grated, juiced
  • 36.40 gm olive oil
  • 9.00 gm white sugar
Instructions:
  • Preheat the oven to 220°C. Cut the capsicum in half, remove and discard the seeds, and place them skin side up on a lined baking tray along with the zucchini. Spray with oil and roast for 30 minutes until the capsicum is collapsed and the skin is golden. Transfer the capsicum to a plastic bag, seal it, and let it stand for 5 minutes. Remove the skin from the capsicum, cut the flesh into thick strips, and place them in a large bowl with the zucchini.
  • Prepare the lemon dressing by mixing lemon rind, 1/4 cup lemon juice, oil, and sugar in a sealed jar. Shake vigorously until fully blended.
  • Combine tomatoes, bocconcini, basil, and dressing with capsicum. Season with salt and pepper, gently toss, and serve.
