Gnocchi salad

Elevate your side salad with easy-to-make potato gnocchi.
Ingredients:
  • 1 small orange sweet potato, thinly sliced
  • Olive oil cooking spray
  • 625g fresh potato gnocchi
  • 250g baby roma tomatoes, quartered
  • 150g roasted red capsicum, thinly sliced
  • 50g baby spinach
  • 82.50 ml shredded fresh basil leaves
  • 13.80 gm olive oil
  • 42.00 gm lemon juice
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Place the potato on a baking tray lined with baking paper and spray with oil. Bake for 12 to 15 minutes until tender.
  • Cook the gnocchi in a saucepan of boiling, salted water according to package instructions until tender. Drain, rinse with cold water, and transfer to a bowl.
  • Combine potato, tomato, capsicum, spinach, basil, oil, and lemon juice with gnocchi. Toss together and serve.
