Elevate lunch with budget-friendly chicken pesto gnocchi ready in 25 minutes.
Ingredients:
  • 500g packet gnocchi
  • 250.00 ml firmly packed fresh basil leaves
  • 40.00 ml raw cashews, toasted
  • 1 small garlic clove, quartered
  • 62.50 ml finely grated parmesan
  • 60g baby spinach
  • 75.08 gm extra virgin olive oil
  • 21.00 gm lemon juice
  • 125.00 ml drained sun-dried tomato strips
  • 375.00 ml shredded cooked chicken
Instructions:
  • Boil gnocchi in a large pot of salted water according to package instructions. Drain, rinse with cold water, and place in a large bowl.
  • Combine basil, cashews, garlic, parmesan, and half of the spinach in a small food processor. Pulse until finely chopped. Add oil and lemon juice, then blend until creamy. Season to taste.
  • Drizzle pesto over gnocchi and mix well. Add tomato, chicken, and the rest of the spinach. Season with salt and pepper. Gently toss to combine. Serve and enjoy!
