Zucchini and eggplant gratin

Delicious high-fiber zucchini and eggplant gratin, perfect as a light and healthy side.
Ingredients:
  • 250g zucchini, thinly sliced
  • 370g eggplant, trimmed, thinly sliced
  • 365.75 gm tomato pasta sauce
  • 250.00 ml grated mozzarella cheese
Instructions:
  • Preheat a non-stick frying pan over medium heat. Generously coat zucchini and eggplant slices with oil on both sides. Cook in batches for 2 minutes per side until golden brown and tender. Place on a plate. Preheat the grill to medium-high heat.
  • In a greased flame-proof dish, create layers with one-third of the eggplant, zucchini, sauce, and cheese. Repeat the layers with the remaining ingredients.
  • Grill until the cheese is bubbly and golden. Serve hot.
