Delightful zucchini quiche with spicy cheese filling.
Ingredients:
  • 2 sheets frozen ready-rolled shortcrust pastry, partially thawed
  • 1 small zucchini, cut into ribbons
  • 60g Greek feta cheese, crumbled
  • 4 eggs
  • 63.13 gm pure cream
  • 62.50 ml finely grated parmesan cheese
  • 20.00 ml finely chopped fresh chives
  • 1/4 tsp chilli flakes
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. Place a baking tray in the oven. Line the tart pan with pastry, then prick the base with a fork. Freeze for 15 minutes until firm. Bake on the hot tray for 10-15 minutes until golden. Reduce oven temperature to 180°C/160°C fan-forced after removing from oven.
  • Layer zucchini slices and crumbled feta cheese in the pastry case.
  • Combine eggs, cream, and cheese in a large jug, whisk together until smooth. Season with salt and pepper, then mix in chives, garlic, and chili. Pour the mixture over the zucchini and bake for 35 minutes or until beautifully golden and set. Serve and enjoy!
