Zucchini and Mushrooms in a Lemon Butter Sauce

Sautéed zucchini and mushrooms in a tangy lemon butter sauce - a delightful vegetarian side dish.
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 oz cremini mushrooms, quartered
  • 1 medium zucchini, chopped
  • 1 garlic clove, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 teaspoon grated lemon peel
Instructions:
  • Heat up 1 tablespoon of butter with olive oil in a skillet over medium-high heat. Add mushrooms and cook for about 5 minutes until they turn golden brown, tossing occasionally.
  • Cook the zucchini until lightly browned, stirring occasionally for about 3 minutes. Then add garlic and cook for 1 minute more.
  • Take the skillet off the heat and mix in the lemon juice and the leftover 1 tablespoon of butter. Season with salt and pepper, then sprinkle lemon zest on top.
