Quick and tasty slice, perfect for immediate enjoyment or convenient meal prep.
Ingredients:
  • Olive oil, to grease
  • 2 medium (about 300g) green zucchini, coarsely grated
  • 100g prosciutto, finely chopped
  • 3 green shallots, ends trimmed, finely chopped
  • Freshly ground black pepper
  • 6 eggs, lightly whisked
  • 240g (1 cup) light sour cream
  • 1 garlic clove, crushed
  • 45g (1/2 cup) finely shredded gruyere
Instructions:
  • Preheat your oven to 180°C and generously grease a 19cm square non-stick cake pan with oil.
  • Mix together the zucchini, prosciutto, and green shallot in a bowl, then spread the mixture over the base of the pan. Season generously with pepper.
  • In a jug, mix together egg, sour cream, and garlic. Pour the mixture over the zucchini. Sprinkle with gruyere. Bake in the oven for 40 minutes until just set. Let it sit in the pan for 5 minutes before cutting into squares to serve.
