Ingredients:
  • 6 sheets Latina™ Fresh Lasagne Sheets
  • 8 slices prosciutto
  • 2 large zucchini, thinly sliced diagonally
  • 1 red onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 400g can diced tomatoes
  • 22.20 gm tomato paste
  • 250g fresh smooth ricotta
  • 250.00 ml coarsely grated mozzarella
  • Mixed salad leaves, to serve
Instructions:
  • Preheat grill until sizzling hot.
  • Boil Cook Latina™ Fresh Lasagne Sheets in a large saucepan of water until tender, about 1 minute. Drain thoroughly.
  • Warm up a 20cm frying pan over medium heat, then cook the prosciutto, turning occasionally, for 2 minutes until it turns a light golden color. Then, remove the prosciutto from the pan and place it on a plate.
  • Pour half of the oil into a pan and add the zucchini. Cook, turning occasionally, for 5 minutes or until the zucchini is just tender. Transfer to a plate.
  • Heat the rest of the oil in a pan. Sauté onion and garlic for 5 minutes until onion softens. Stir in tomato paste and cook for 1 minute, then add tomatoes and bring to a simmer. Stir and cook for 5 minutes until the sauce slightly thickens. Transfer to a bowl.
  • Spread a layer of one-third of the tomato mixture in the frying pan. Add one-third of the lasagne sheets. Layer half of the prosciutto and zucchini on top of the pasta. Spread half of the remaining tomato sauce over the ingredients. Add the rest of the lasagne sheets. Repeat layering with the remaining prosciutto, zucchini, tomato sauce, and pasta. Finish by spreading ricotta and topping with mozzarella.
  • Grill until golden brown and heated through for 3-5 minutes. Cut into wedges and serve immediately with mixed salad leaves.
