Frying pan peach and ginger pudding

Quick stovetop pudding, perfect for any meal!
Ingredients:
  • 155g (1 cup) wholemeal spelt flour
  • 5.00 gm baking powder
  • 50.00 ml organic panela sugar
  • 1.88 gm ground cinnamon, plus extra
  • 150ml reduced-fat milk
  • 50g glace ginger, finely chopped
  • 15g butter
  • 16.80 gm coconut oil
  • 2 just-ripe peaches, sliced (see Notes)
  • 125.00 ml no-fat Greek yoghurt, to serve
  • Fresh mint leaves, to serve (optional)
Instructions:
  • Preheat your oven to 180C/160C fan forced. In a bowl, mix together flour, baking powder, 2 tbs sugar, and 1⁄2 tsp cinnamon. Create a hole in the middle of the mixture. In a separate jug, whisk together milk, egg, and half of the ginger. Set aside.
  • In a non-stick ovenproof frying pan, heat the butter and oil over medium heat until foaming. Reserve a bit of the fat in the pan. Add the milk mixture, followed by the peaches and 1 tsp sugar. Cook and turn the peaches for 2-3 minutes until they are lightly caramelized. Transfer to a plate.
  • Combine the milk mixture with the dry ingredients just until mixed, then pour into a pan and level the top. Press the peach into the batter and sprinkle with the remaining sugar, cinnamon, and ginger. Bake for 20 minutes until set. Let it cool for 5 minutes before serving with yogurt, mint leaves (if desired), and a sprinkle of extra cinnamon.
