Make unique flourless skillet cookies by swapping vanilla with rum extract for a boozy twist.
Ingredients:
  • 1.5 cups dates, pitted and chopped
  • 0.25 cup butter
  • 2 eggs
  • 1 cup white sugar
  • 0.25 teaspoon salt
  • 0.5 cup chopped walnuts
  • 3 cups crisp rice cereal
  • 0.5 cup flaked coconut
  • 0.33333298563957 cup confectioners' sugar
Instructions:
  • In a heavy skillet, melt butter or margarine. Pour in the beaten eggs, then mix in the dates, sugar, salt, and vanilla. Cook over low heat, stirring constantly, until the mixture is thick and well combined.
  • Combine the cooked mixture with crisp rice cereal and chopped nuts in a large bowl and stir until evenly coated.
  • Chill the mixture by teaspoonfuls on a cookie sheet, then chill again. Once cold, coat with a crunchy blend of rice crumbs and coconut or powdered sugar before serving.
