Try our unique twist on traditional lasagna - impress your guests with our easy and delicious roll-up version!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 500g pork and veal mince
  • 80g sliced pancetta, finely chopped
  • 1 small onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 celery stick, finely chopped
  • 2 garlic cloves, crushed
  • 90g (1/3 cup) tomato paste
  • 250ml (1 cup) chicken style liquid stock
  • 1 bay leaf
  • 500ml (2 cups) passata
  • 4 fresh lasagne sheets
  • 185ml (3/4 cup) thickened cream
  • 40g (1/2 cup) shredded parmesan
  • 100g (1 cup) coarsely grated three cheese mix
  • Micro herbs, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced for the perfect cooking environment.
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil. Brown the mince by cooking and stirring for 3-4 minutes. Then, add pancetta, onion, carrot, celery, and garlic. Cook and stir for 5 minutes until softened. Stir in the tomato paste and cook for 2 more minutes until it turns dark red.
  • Pour in the stock, add a bay leaf, and stir in 1 cup of passata in the pan. Bring it to a boil, then lower the heat to medium and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens. Season to taste.
  • Slice the lasagne sheets in half crosswise using a sharp knife, then cut each half into 4 strips.
  • In a 6-cup ovenproof frying pan or baking dish, layer the remaining passata. Fold each lasagne strip into a large tube, overlapping slightly, then arrange them upright in the pan. Continue folding and arranging the remaining strips in concentric circles to maintain their shape.
  • - Spoon bolognaise into pasta tubes using 2 teaspoons. - Combine cream and parmesan in a jug, season, and drizzle over the pasta tubes. - Sprinkle with cheese, ensuring the tubes are well covered. - Bake for 35-40 minutes until cheese is golden and pasta is tender. - Finish by sprinkling with herbs.
