Zucchini and squash bake

Delicious comfort dish with fresh summer ingredients, great with a zesty salad dressing!
Ingredients:
  • 350g yellow squash, thinly sliced
  • 350g zucchini, thinly sliced
  • 36.40 gm extra virgin olive oil
  • 62.50 ml finely grated parmesan
  • 40.00 ml panko breadcrumbs
  • Fresh oregano leaves, to serve
Instructions:
  • Preheat the oven to 180C (160C fan forced) and generously grease a 20cm round ovenproof dish with oil.
  • In a large bowl, combine squash and zucchini. Drizzle half of the oil and toss to coat well. Season with salt and pepper. Arrange the vegetables in a single layer in a prepared baking dish, alternating between zucchini and squash for a visually appealing effect. Drizzle the remaining oil over the top. Sprinkle with cheese and breadcrumbs. Bake for 1 hour or until golden and tender. Garnish with fresh oregano before serving.
