Summer chicken bake with tomatoes, squash, zucchini, and gooey mozzarella.
Ingredients:
  • 4 boneless, skinless chicken breast halves
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 yellow squash, thinly sliced
  • 1 medium zucchini, thinly sliced
  • 1.5 cups shredded mozzarella cheese
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a medium baking dish.
  • Place the chicken in the baking dish, layer with stewed tomatoes, surround with squash and zucchini slices, and finish by sprinkling with mozzarella cheese.
  • Roast in a preheated oven for 45 minutes, or until the chicken is cooked through and the juices are clear.
