Wholesome Mediterranean chicken couscous - quick, flavorful lunch.
Ingredients:
  • 500g chicken thigh fillets, excess fat trimmed cut across the grain into strips
  • 27.30 gm olive oil
  • 1/2 tsp cracked black pepper
  • 500mls (2 cups) chicken style liquid stock
  • 1 lemon, rind finely grated, juiced
  • 380g (2 cups) couscous
  • 250g (1 punnet) cherry tomatoes, quartered
  • 50g (1/4 cup) green olives, pitted, quartered
  • 125.00 ml finely chopped fresh continental parsley leaves
  • 4 green shallots, trimmed, diagonally sliced
  • 40.00 ml drained capers, chopped
Instructions:
  • Combine chicken, oil, garlic, and pepper in a shallow dish, ensuring everything is mixed well. Heat a large saucepan over medium-high heat and cook half of the chicken mixture for 2-3 minutes until just cooked. Transfer to a plate, cover loosely with foil to keep warm, and set aside. Repeat with the remaining chicken mixture.
  • Turn up the heat to high and pour in the stock and lemon juice. Let it come to a boil while stirring to release any bits stuck to the pan. Take the pan off the heat and mix in the couscous. Cover and let it sit for 2-3 minutes until the liquid is absorbed. Fluff up the couscous with a fork before serving.
  • Combine the chicken, lemon rind, tomatoes, olives, parsley, green shallots, and capers, then toss together and serve immediately.
