Mediterranean-style chicken wraps with tender chicken breasts for a hearty lunch.
Ingredients:
  • 2 chicken breast fillets
  • 18.20 gm extra virgin olive oil
  • 4 Lebanese bread (30cm diameter)
  • 1 200g container bought hummus
  • 1 250g container bought tzatziki
  • 125ml (1/2 cup) extra virgin olive oil
  • 1/2 lemon, juiced
  • 1 garlic clove, crushed
  • 1 tsp chopped fresh thyme
  • Freshly ground black pepper
  • 3 tomatoes, chopped
  • 1/2 red onion, chopped
  • 40.00 ml chopped fresh mint leaves
Instructions:
  • Prepare the marinade by mixing the oil, lemon juice, garlic, thyme, and pepper in a bowl. Add the chicken and ensure it's well coated. Refrigerate for 30 minutes to marinate.
  • Prepare the tomato salsa by mixing the tomatoes, onion, and mint in a medium bowl, then set it aside.
  • In a heated medium frying pan with oil, add the drained chicken. Cook each side for 3-4 minutes or until fully cooked. Rest on a plate, loosely covered with foil for 5 minutes, then slice into 1cm-thick pieces.
  • Heat the Lebanese bread in a frying pan over medium heat for 30 seconds on each side. Spread hummus over the bread, add chicken slices down the center, and top with tomato salsa and tzatziki. Roll up, secure the roll with greaseproof paper or foil, and repeat with the remaining ingredients. Serve promptly.
