Ingredients:
  • 400g chicken breast
  • 2.50 gm Portuguese chicken seasoning
  • 10.60 gm lemon juice
  • 27.30 gm olive oil
  • 81.68 gm whole-egg mayonnaise
  • 22.00 gm sweet chilli sauce
  • 20.00 ml finely chopped fresh coriander leaves
  • 1 baby cos lettuce heart, leaves washed, shredded
  • 1 Lebanese cucumber, cut into sticks
  • 250g grape tomatoes, halved
  • 8 mini flour tortillas
Instructions:
  • 1. Preheat the oven to 180C/160C fan forced and line a baking tray with parchment paper. 2. Arrange the chicken in a single layer in a shallow ceramic dish. 3. In a jug, mix together the seasoning, lemon juice, and 1 tablespoon of oil. 4. Pour the mixture over the chicken, ensuring each piece is coated. 5. Cover the dish and refrigerate for 20 minutes.
  • In a hot frying pan, sear the chicken for 1 to 2 minutes per side until golden. Then, transfer the chicken to a baking tray and bake for 15 to 20 minutes until fully cooked.
  • In a bowl, blend together mayonnaise, sweet chili sauce, and coriander. Place lettuce, cucumber, and tomato in separate bowls.
  • Warm tortillas in the microwave according to the package instructions. Slice the chicken thinly and place it in a bowl. Serve the chicken with lettuce, tomato, cucumber, tortillas, and a delicious mayonnaise mixture.
