Lemon-zested zucchini pasta with charred salmon.
Ingredients:
  • 200g dried angel hair pasta
  • 80ml (1/3 cup) olive oil
  • 5 (about 1kg) zucchini, coarsely grated
  • 2 garlic cloves, thinly sliced
  • 50.00 ml currants
  • 50.00 ml pine nuts
  • 3 drained anchovy fillets, finely chopped
  • 4 skin-on salmon fillets
  • 9.20 gm olive oil, extra
  • 82.50 ml chopped fresh basil
Instructions:
  • Boil the pasta until al dente, then cool it under running water. Drain and toss with 2 teaspoons of oil in a bowl.
  • Heat the rest of the oil in a big frying pan over medium-high heat, then add the zucchini, garlic, currants, pine nuts, and anchovy. Sauté for 5-6 minutes until the zucchini is tender.
  • Heat up the barbecue grill or chargrill on medium-high. Brush the salmon with a little extra oil and season it. Grill the salmon, starting skin-side down, for 5 minutes. Flip and grill for an additional 3 minutes or until it's done to your liking.
  • Combine the zucchini mixture, fresh basil, and zesty lemon juice with the pasta mixture and toss everything together. Serve alongside perfectly cooked salmon.
