Classic Pasta Primavera

Indulgent angel hair pasta primavera in a creamy butter sauce with Parmesan and fresh veggies. Pair with white wine for a perfect meal!
Ingredients:
  • 1 heaping cup broccoli florets
  • 4 asparagus spears, trimmed and cut into 1-inch segments
  • 1/2 cup snow peas
  • 1/2 pound angel hair pasta or spaghetti
  • 4 tablespoons unsalted butter
  • 3 garlic clovesminced
  • 1 small zucchini, diced
  • 3 Roma or other paste tomatoes, seeded and diced
  • 1/4 cup chicken or vegetable stock
  • 1/2 cup heavy cream
  • 1/2 cup peas, fresh or frozen
  • 1/2 cup grated Parmesan cheese
  • 12 basil leaves, chopped
  • Salt
Instructions:
  • Prepare and cool the vegetables: Bring a large pot of well-salted water to a boil. Fill a large bowl with ice water. Boil broccoli for 1 minute, then add asparagus and boil for 1 more minute. Finally, add snow peas and boil for 30 seconds. Remove the vegetables and place them in the ice water to cool. Drain in a colander. You can use the same pot of water to cook pasta if desired.
  • In a large sauté pan over medium-high heat, melt the butter until sizzling. Add the zucchini and garlic, sauté for 1 minute. Toss in the diced tomatoes and cook for an additional 2 minutes, stirring frequently.
  • Combine the stock, cream, blanched vegetables, and peas in a pot. Bring to a boil over high heat. Lower the heat to a simmer once the mixture is ready.
  • Sprinkle in the Parmesan cheese and gently mix until well blended. If the sauce is overly thick, adjust the consistency by incorporating additional chicken broth, cream, or water.
  • Cook the spaghetti in boiling water before sautéing the garlic and zucchini. Angel hair cooks in 1-2 minutes, while vermicelli or spaghetti takes 8-12 minutes.
  • Transfer the cooked pasta into the sauce using tongs and mix well. Add fresh basil and adjust seasoning with salt to taste. Finish with a sprinkle of black pepper and serve promptly. Pair this dish with a crisp dry white wine for a delightful meal.
