Zucchini bread breakfast pizza, topped with Greek yogurt, fruit, and maple syrup.
Ingredients:
  • 2 tablespoons coconut flour
  • 0.125 teaspoon ground cinnamon
  • 0.5 cup shredded zucchini
  • 1 egg, beaten
  • 1.5 teaspoons pure maple syrup
  • 0.125 teaspoon vanilla extract
  • 0.25 cup Greek yogurt
  • 2 fresh strawberries, hulled and sliced
  • 4 grapes, halved
  • 0.5 banana, sliced
  • 0.25 teaspoon orange zest, or to taste
  • 1 teaspoon maple syrup, or to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet with a lovely layer of parchment paper.
  • In a bowl, mix coconut flour and cinnamon. Add zucchini, egg, 1 1/2 teaspoon maple syrup, and vanilla extract. Stir well to combine. Spread the zucchini mixture onto the prepared baking sheet in the shape of a pizza crust.
  • Bake the zucchini "crust" in the preheated oven for about 15 minutes until cooked through. Allow the "crust" to cool.
  • Smoothly layer the yogurt over the zucchini "crust", then arrange the strawberries, grapes, banana, and orange zest on top before finishing with a generous drizzle of maple syrup.
