Zucchini bread with a rich, moist flavor enhanced by brown sugar, nuts, and raisins.
Ingredients:
  • 3 eggs
  • 0.75 cup vegetable oil
  • 1.6666666269302 cups packed brown sugar
  • 2 cups grated zucchini
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously grease and flour two 9x5-inch loaf pans.
  • In a large bowl, vigorously beat the eggs. Mix in oil, brown sugar, zucchini, and vanilla until well combined. Gradually fold in flour, cinnamon, baking powder, baking soda, and salt. Gently stir in raisins and nuts. Transfer the batter into the loaf pans.
  • Bake until a toothpick inserted in the center comes out clean, approximately 1 hour.
