Zucchini bread with applesauce, cinnamon, and pecans - ideal for breakfast or a cozy fall dessert.
Ingredients:
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1.75 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 cup shredded zucchini
  • 1 cup applesauce
  • 3 teaspoons vanilla extract
  • 1 cup chopped pecans
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while generously greasing two loaf pans.
  • In a bowl, mix together flour, cinnamon, salt, baking soda, and baking powder and set aside.
  • In a separate bowl, blend sugar, oil, and eggs together. Mix in zucchini, applesauce, and vanilla extract until well combined with the dry ingredients. Fold in pecans and distribute the batter evenly into the prepared pans.
  • Bake in the oven until a toothpick comes out clean when inserted into the center, approximately 1 hour. Allow it to cool a bit before slicing and serving.
