Zucchini, mozzarella, and tomato layers baked with Parmesan and basil.
Ingredients:
  • 2 tablespoons olive oil
  • 4 zucchini, sliced
  • 1 large clove garlic, crushed
  • 4 ounces thinly sliced mozzarella cheese
  • 4 large tomatoes, peeled and sliced
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil
  • salt and freshly ground black pepper
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and adjust the oven rack to the upper third position.
  • In a large skillet over medium heat, heat olive oil and lay zucchini slices in a single layer. If needed, cook in batches. Sprinkle garlic over zucchini and cook until golden brown on both sides, around 8 minutes each side. Remove from heat.
  • Layer zucchini, mozzarella cheese, and tomato slices in a 9x12-inch glass baking dish, creating an elegant overlapping pattern. Generously sprinkle with Parmesan cheese, basil, salt, and pepper before baking.
  • Bake until the cheese is gooey and golden brown, and the dish is bubbling, for around 30 minutes in the preheated oven.
