Soft and spicy cookies with a nutty crunch!
Ingredients:
  • 0.5 cup packed brown sugar
  • 0.5 cup white sugar
  • 0.5 cup shortening
  • 1 egg
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 1 cup grated zucchini
  • 1 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat your oven until it reaches 325 degrees F (165 degrees C) and generously grease your cookie sheets.
  • Cream together the shortening, brown sugar, and white sugar until smooth. Beat in the egg. Combine flour, baking soda, salt, cinnamon, nutmeg, and cloves; mix into the creamed mixture. Fold in zucchini, raisins, and walnuts. Drop rounded tablespoons onto baking sheets.
  • Bake in the preheated oven for 15 minutes or until lightly browned. Allow to cool on the cookie sheets briefly before transferring to wire racks to cool completely.
