Indulge in a maple-infused zucchini-nut bread for all the maple lovers out there.
Ingredients:
  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 3 teaspoons maple flavored extract
  • 2.5 cups all-purpose flour
  • 0.5 cup wheat germ
  • 2 teaspoons baking soda
  • 0.5 teaspoon baking powder
  • 2 cups grated zucchini
  • 1 cup chopped walnuts
Instructions:
  • In a mixing bowl, whip 3 eggs, then combine with oil, sugars, and flavoring until mixture is foamy. Add flour, wheat germ, baking powder, baking soda, and salt, then fold in zucchini and nuts. Transfer batter into 2 greased bread pans.
  • Bake for 1 hour at 325°F (165°C), then allow to cool.
