Zesty zucchini ribbons with tangy feta and fresh dill create a vibrant and crisp salad.
Ingredients:
  • 3 medium zucchini, rinsed
  • 3 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon chopped fresh dill weed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and freshly ground black pepper
  • 2 tablespoons crumbled feta cheese
Instructions:
  • Create delicate zucchini ribbons by using a vegetable peeler or mandolin slicer to carefully slice the zucchini lengthwise.
  • Combine oil, vinegar, dill, mustard, and honey in a medium bowl. Whisk until well blended. Season with salt and pepper to taste. Add zucchini and toss gently to coat. Allow to marinate for 10 minutes.
  • Arrange the zucchini evenly on 4 serving plates and sprinkle with flavorful feta cheese on top.
