Zucchini rolls filled with basil ricotta, ready in 10 minutes - a delightful appetizer!
Ingredients:
  • 1 medium zucchini
  • 1/2 cup ricotta cheese
  • Grated peel of 1 lemon
  • 1 tablespoon chopped fresh basil leaves
  • Salt and freshly ground pepper to taste
  • Olive oil
  • 4 fresh basil leaves
Instructions:
  • Slice zucchini lengthwise into 4 thin pieces using a mandoline or sharp knife. (Save the rest of the zucchini in the fridge for later or make more appetizer bites.)
  • Combine cheese, lemon zest, fresh basil, salt, and pepper in a small bowl.
  • Roll up each zucchini slice tightly, securing with a toothpick. Fill the center of each roll-up with the cheese mixture either using a spoon or piping from a plastic bag.
  • Arrange the appetizer bites beautifully on a small serving platter. Lightly drizzle them with oil and top each with a fresh basil leaf. Add a sprinkling of extra pepper for more flavor, if you prefer.
