Salsa and Cheddar scrambled eggs with hidden zucchini for added flavor and nutrients.
Ingredients:
  • 1 large zucchini
  • 8 eggs
  • 0.5 cup salsa
  • 3 ounces Cheddar cheese
  • salt and ground black pepper to taste
Instructions:
  • Grate zucchini, squeeze out any excess moisture, and then drain.
  • In a large nonstick pan over low heat, crack eggs and gently swirl yolks into whites. Add zucchini and salsa. Cook until eggs are nearly set, around 5 minutes. Sprinkle Cheddar cheese and cook until melted, about 2 more minutes. Stir, season with salt and pepper, and enjoy!
