Sautéed zucchini scramble with Parmesan and garlic - a delicious meal anytime!
Ingredients:
  • 4 eggs, lightly beaten
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 zucchini, sliced 1/8- to 1/4-inch thick
  • garlic powder, or to taste
Instructions:
  • Combine the beaten eggs and Parmesan cheese in a bowl; set aside.
  • In a large skillet, heat a generous amount of olive oil over medium-high heat. Sauté the zucchini, stirring occasionally, until it is tender and has a nice golden color, approximately 7 minutes. Season with garlic powder, salt, and pepper to taste.
  • Lower the heat to medium, then pour the egg mixture over the zucchini in the skillet. Gently stir and cook for approximately 3 minutes. Remove the skillet from heat, cover with a lid, and allow the eggs to set for about 2 more minutes.
