Cheesy zucchini, tomato, and onion casserole with a buttery biscuit topping - perfect for an easy summer meal.
Ingredients:
  • 2 cups chopped zucchini
  • 1 cup chopped tomato
  • 0.5 cup chopped onion
  • 0.33333298563957 cup grated Parmesan cheese
  • 0.75 cup biscuit baking mix
  • 0.5 cup milk
  • 3 eggs
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a 10-inch pie pan.
  • Mix zucchini, tomato, onion, and Parmesan cheese in the pie pan. In a separate bowl, blend biscuit mix, milk, eggs, salt, and pepper until smooth. Pour the mixture over the vegetables in the pan.
  • Bake until a knife comes out clean, approximately 30 minutes in a preheated oven.
