Gluten-free waffles with zucchini and potato flakes, perfect for any meal of the day.
Ingredients:
  • 3 cups shredded zucchini
  • 1 tablespoon vegetable oil
  • 0.25 teaspoon onion powder
  • 1 pinch salt
  • 0.5 cup dry potato flakes
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat your waffle iron as per the manufacturer's guidelines.
  • In a bowl, combine zucchini, eggs, vegetable oil, onion powder, and salt. Add potato flakes and baking powder, stirring until batter is well mixed.
  • Ladle a generous 1/2 cup of batter onto the center of the waffle iron. Close the lid and cook until the steam stops and the waffle is beautifully crisp, approximately 5 minutes.
